It is a big week for Italian cuisine in Dallas, where Eataly opened its latest stunning location. In an Instagram Live Event, La Cucina Italiana Editor in Chief Maddalena Fossati connected with Dino Borri of Eataly, who gave viewers a glimpse of what the new “food wonderland” has in store for lucky Texans.
La Cucina Italiana magazine latest issue, with a festive pandoro on the cover, is available at the Dallas outpost, and it has already made its mark: “We sold more pandoro than panettone, because people feel inspired by La Cucina Italiana’s cover!” noted Dino. The magazine is also part of one of Eataly’s curated holiday gift baskets of Italian delicacies, a perfect inspiration for home cooks.
It was only 9.30am in Dallas, but customers could already be seen walking the aisles scouting for Italian treats. Pizza makers were busy preparing pizza alla pala, a Roman style pies sold by the slice with a wide a variety of toppings and tasty focaccia alla Genovese, the thin flatbread coated with fragrant olive oil, all made with Italian organic flour. “We also have Neapolitan pizza at our La Pizza & Pasta restaurant,” noted Borri, “and for the first time in Eataly North America, we offer pizza fritta (fried pizza)”.
All fresh pasta, bread and pastries are made on the premises as well, including an incredible variety of cakes, cannoli and “pasticcini,” delightful mini pastries including a “tiramichoux”, tiramisù flavored beignet. The gelato is another sweet must-have, available in 16 flavors.
Eataly Panetteria
“We offer 10,000 products, including over 500 cheeses and salumi (cured meats)”, added Dino. “We have a butcher counter, a fish monger, a produce section. All fresh products are American, locally sourced in Texas when possible, while the rest are imported from Italy.”
All three restaurants, including La Pizza & Pasta, Il Pastaio and Terra, the rooftop eatery serving grilled meats, are open for reservations. Eataly cooking school space, which they plan to open as soon as the Covid-19 emergency is under control, is now home to a Holiday market packed with panettone, pandoro and gift baskets.
Eataly Dallas, which hired 500 employees, is a welcomed opening in an uncertain time that brings positivity to the food industry. Like all Eataly locations, it follows strict safety measures for employees and customers, from mask wearing to social distancing.
