Red Salad: Erin Gleeson's Recipe
Serves 4
Ingredients:
1 red pepper (diced)
1 bunch of radishes (about 8, chopped)
1/4 of red onion (diced)
1 ½ oz dehydrated cherries
5 oz cherry tomatoes (cut in half)
3 oz pomegranate seeds
1 red apple (diced)
Method:
Mix all the ingredients in a bowl and season with olive oil, 1/2 orange juice and a pinch of salt.
