In this case, choosing the right cheese pairing is essential given the combination with fish. We decided on mascarpone cheese to give the recipe a light Italian flair. It’s perfect for the holiday menu from Christmas Eve to New Years!

Creamy Shells with Salmon

Ingredients for 6
1 1/2 lb. fresh salmon1 lb. pasta, such as shells
2 cups mascarpone
1 1/2 cup cream cheese
unsalted butter
salt
- In a bowl, combine the mascarpone and cream cheese with a pinch of salt, and mix until homogeneous.
- Bring a pot of salted water to a boil and cook the pasta until al dente.
- Drain, and combine with the mascarpone, cream cheese and a pinch of salt.
- Preheat the oven to 350°F.
- Grease a baking dish with butter.
- Cut the salmon into long thin slices, then line the baking dish with the salmon so that it hangs over the edges.
- Pour the pasta into the baking dish, then fold the salmon over the top.
- Place in the oven and bake for about 10 minutes.
