- 1 LB. of baby potatoes
- 14 OZ. of green beans
- 2 yellow bell peppers
- Garlic
- Chopped herbs (sage, rosemary)
- Olive oil
- Salt
Method

Trim the green beans, cook them in plenty of salted boiling water and drain when still crunchy. Meanwhile, wash and scrub the potatoes with their skins, then place them in a baking dish, add 5 cloves of unpeeled garlic, a little olive oil, a pinch of salt and bake at 425 °F for 20 minutes. Trim the bell peppers and slice them into strips. Heat 4 tablespoons of olive oil in a frying pan and add the parboiled green beans and strips of bell peppers; add a pinch of salt, cover and let simmer for 10 minutes. Then add these vegetables to the roast potatoes and garlic cloves along with a tablespoon of chopped herbs and cook for about another 5 minutes. Serve hot.
