- 14 OZ. of spaghetti
- 11 OZ. of baby squid
- 4 of garlic cloves, sliced
- fresh chili pepper
- 1 BUNCH of parsley, chopped
- extra-virgin olive oil
- salt
Method
Clean the squid. Rinse and drain them.
Clean two chili peppers, remove the seeds and ribs, and mince.
Cook the spaghetti in a large pot of boiling salted water until nearly al dente. Drain, reserving 1 cup of pasta cooking water.
Meanwhile, heat 1/2 cup oil in a large saucepan. Add the sliced garlic cloves and cook over high heat for around 2 minutes, then add the squid. Cover, reduce the heat, and simmer for 3 minutes.
Add the chopped parsley, the drained spaghetti, and a small ladleful of pasta cooking water (around 1/4 cup). Quickly toss the pasta to coat and finish cooking until al dente. Transfer to a serving plate and serve immediately.
In this recipe, you can adjust the number of garlic cloves and amount of minced chili pepper to taste.
