- 2 of lemons
- 11 OZ. of sushi grade sardines (to be eaten raw)
- 3 OZ. of arugula
- 1 fresh chili pepper
- white wine vinegar
- sugar
- extra-virgin olive oil
- salt

Wash the lemons, cut off the ends, slice thinly and remove the seeds. Slice the chili pepper into rounds. Marinate the lemons for 1 hour in 1 2/3 cup cold water with 3 Tbsp. vinegar, 1/2 Tbsp. salt and the sliced chili pepper.

Mix 2 1/2 Tbsp. sugar and 1 1/2 Tbsp. salt. Clean the sardines; remove the heads, innards and scales, rinse well under cold water. Let rest in a bowl for 1 hour, alternating a layer of salt and sugar with a later of sardines.

Trim the stems off the arugula, and dress with oil and salt.

Drain the lemons; rinse the marinated sardines and pat dry with a paper towel. Serve the lemons, sardines and arugula, drizzled with oil.
