- 1 LB. of half duck breast
- 6 of slices multi grain bread
- 6 of figs
- 6 of plums
- Shelled walnuts
- Mixed salad greens
- Butter
- Extra virgin olive oil
- Salt
- Pepper
Method

To make fig salad with plums, walnuts, and duck breast, first brown the duck breast, skin-side down, over the lowest heat setting for 5-6 minutes, then cover and cook a further 2-3 minutes; turn over, turn off the heat, cover again, and set aside to rest for 10 minutes. Toast the bread slices in a red-hot frying pan greased with butter for 1-2 minutes per side.

Finely slice the duck breast. Carefully clean the figs and plums, then slice the figs and cut the plums into wedges. Place the bread slices on the plates, then add the duck breasts, a few fig slices, a few walnuts, and the mixed salad leaves tossed with a little oil, salt and pepper, and a few fennel fronds to taste.
