The added value of aromatic herbs in the kitchen is infinite, and in this recipe sage is the master. Combined with sausage and turkey, this herb releases a scent and flavor that is crucial to the taste of the dish. In these months when temperatures drop and the jars of thyme, marjoram, sage, basil and all the other plants can no longer stand on our balcony, we need to find the right way not to lose the scents and flavors that we have enjoyed throughout the spring and summer. One solution could be to freeze the leaves once cleaned: in this way it will be enough to take them out of the freezer a few minutes before using them and in our dishes we will find all the aroma we are used to. Another method is to let them dry and then leave them in an airtight jar that keeps all the scent. In both cases we will be able to regurgitate all the aroma without losing the properties of these herbs.
Our recipe for turkey sausage skewers
Start by cutting about 500 g turkey breast into 2 x 3 cm cubes. Then remove the casing from the pork sausage and crumble the meat. Dice 300 g bacon and chop a handful of washed and dried sage. Now for the assembly: Alternating ingredients, skewer the turkey, bacon, sausage, sage leaves and finish with another cube of turkey. Continue until ingredients are all skewered. Dice one onion and sauté it with a drizzle of extra-virgin olive oil in a large non- stick pan. Once golden-brown, add 500 g tomato sauce to the pan, followed by the skewers of meat. Salt, cover and let the ingredients cook together for about 1 hour, rotating the skewers from time to time. Once ready, adjust the sale and serve with a side dish.

Cut the turkey breast into cubes as evenly as possible.
