Amounts and advice
For 4-6 people you need a chicken weighing about 3 3/4 pounds, already gutted and plucked. Choose an organic free-range chicken if possible. It will be firmer and tastier. You’ll also need 1 clove of garlic, 1 lemon, 4 sprigs of sage and 4 sprigs of rosemary, extra-virgin olive oil, salt and pepper.
Here’s a secret: place it on a grate and put a plate underneath: all the fat will collect on the plate and the skin will become very crispy.
1. Burn any remaining quills; a kitchen torch is best for this.
2. Stuff the chicken with 2 large lemon wedges, 1 clove of unpeeled garlic, a few sprigs of sage and rosemary, and salt and pepper to taste.
3. Chop the remaining herbs and add a pinch of salt and a little pepper.
4. Grease the chicken with oil and massage its entire surface with the chopped herbs.
5. Tie it up by joining the two thighs with the bottom so that it doesn't separate.
6. Place it on a baking grill with a plate underneath and cook at 400°F. The rule is 1/2 hour in the oven for every pound of chicken.
