Freshly cooked pasta in a homemade broth is the ultimate comfort food, especially when you’re feeling a little under the weather or down in the dumps. And for the perfect consistency and texture, these are our favorite pasta varieties to pair!
Stelline. Use this pasta variety for a very brothy consistency. Plus, the kids love the little star shapes!
Filini. If you like a bit of texture in your soup, this pasta variety is perfect. It’s large in size, so the soup will be dense.
Anellini. This great classic is perfect with vegetable and fish broths. A mince of fresh chili pepper before serving and you’ll want to make this one again and again!
Corallini. This pasta variety is very small, making it similar to the stelline above. Be careful not to overcook them or they’ll disintegrate into the broth.
Midolline or puntine. This variety is perfect for light chicken or vegetable broths and you can even add cheese at the end! The texture is reminiscent of rice grains, so it "holds" even heavier ingredients without sticking to the bottom of the dish.

It's easy to say “pastina e brodo.” (“Pasta and broth.”) But how much pasta should you add, exactly? Finding the right balance is a matter of experience, but there are general rules to start with. 1 ½ oz of pasta for every 9 oz of broth, for example. And if you’re using egg pasta, increase the amount of broth slightly.
