You want to make a good tiramisù, but maybe you don’t have any ladyfingers on hand. Don't worry about it. Making ladyfingers from scratch is pretty simple and the list of ingredients is really short. To make homemade ladyfingers, all you need are: eggs, Italian 00 flour (or pastry flour), sugar, powdered sugar, lemon… oh, and the right recipe! In the tutorial below, we’ve got the perfect one – by our very own stylist Beatrice Prada! She’s tried her hand at making ladyfingers – known traditionally as ‘savoiardi’ in Italian – to make a delicious tiramisù later!
The Recipe: Classic Ladyfingers
Ingredients:
6 eggs, 7 oz flour, 5 oz sugar, Powdered sugar, Zest of one lemon
Preheat the oven to 340°F and line two baking sheets with baking parchment. In a large bowl, whip the egg whites with 4 oz sugar until stiff peaks form. Separately, beat the egg yolks with the remaining sugar, adding lemon zest once blended.
Once blended, gently fold into to the egg white mixture until combined. Add well-sifted flour a little at a time, making sure you gently fold the flour into the mixture from bottom to the top to avoid dismantling the volume of the egg whites. (The texture must remain creamy and light.)
Using a pastry bag (or a cone of baking parchment), squeeze the mixture onto the baking sheets in strips of about 3x10 cm.
Sprinkle with powdered sugar and bake for about 15-20 minutes (at 340°F).
