During the holidays, we usually make mashed potatoes. But this year, we’ve got a new idea: mashed celeriac! It’s a very simple and tasty recipe that can enhance the flavor of the celeriac.
Celeriac as an ingredient
Celeriac is mainly made from water, so it’s low in calories. It helps with purification, digestion and diuresis. Moreover, it’s rich in selenium, potassium and numerous other minerals and important amounts of vitamins A and C. It can be eaten raw, but also baked, breaded or used in soups. But you definitely have to try celeriac with either potatoes or with ginger and broccoli. And we can’t forget creamy vellutata soup made from celeriac!
Mashed celeriac for the holidays
For an original and homemade holiday celeriac purée, you’ll need: 2 lb of celeriac, 2 cups of milk and 2 oz of butter. That’s it. Add the milk and the peeled and chopped celeriac to a pot and cook for about 20 minutes. Then transfer to a blender and blend until smooth. Transfer back to the pot once more and mix with salt, pepper and butter to taste. Serve warm.
Another recipe
Besides the above recipe, there’s another way to make mashed celeriac. Alternatively, you can peel, wash and dice 2 lb of celeriac. Then cook it in a pot with one chopped browned onion over medium heat for about 15 minutes with a little over ½ liter vegetable stock. Once the celeriac softens, blend it with salt to taste and serve.
An ideal side dish for meat and fish
But what can you combine with a mashed holiday celeriac? Certainly meat dishes, especially pork. Or lamb chops (a common dish in Italy during the holidays). Then again, you could always serve it with salmon and fresh herbs. Veal, chicken, duck breast or even sea bream pair well with it, as well!
