Lingue di Procida is undoubtedly the must-eat sweet on the island of Procida. The Tyhrennian island, just a 40-minute ferry ride from Naples, was recently named Italy’s Capital of Culture 2022. A puff pastry stuffed with cream made from the island’s sweet lemons, lingue di Procida are also known as lingue di bue, or ox tongues, so-called for their thick and oblong shape.
Here’s the recipe so you can make them at home.

Lingue di Procida recipe
Ingredients:
1 lb. of puff pastry (2 rolls)
4 large egg yolks
1 large egg white
⅔ cup granulated sugar
1⅔ cups milk
3 ⅓ Tbsp. flour
grated zest of 1 lemon
Method:
In a saucepan, thicken the sugar, flour, 3 egg yolks, and lemon zest over low heat, mixing constantly. Once the mixture is thick and uniform, pour it into a container and cover it with plastic wrap.
Roll out the first roll of puff pastry, making small ovals measuring 6″ × 3″, then repeat with the second sheet.
Pierce the ovals with a fork, then brush the edges with the egg white and spread a spoonful of cream on top of one — make sure it does not seep out of the edges. Now lay another oval on top, making sure that the edges adhere and seal well (the egg white serves as a glue).
Brush all the ovals with the remaining yolk and a little milk and sprinkle them with sugar. Preheat the oven to 400°F and bake for 20 minutes, until the surface is golden. Remove from the oven and eat while warm and crunchy.
