Vegan mozzarella can be prepared at home and we recommend you give it a try. First, chop a shallot and braise it in a pan over low heat with a little water. Then add 150 g of soy yoghurt, 120 ml of soymilk, two tablespoons of cornstarch and a tablespoon of agar. Adjust the salt and blend everything. Then add 120 gr of soy ricotta cheese and blend again. Put everything back on the heat until the mixture thickens and at this point add a tablespoon of extra virgin olive oil and stir until the liquid mixture begins to detach from the sides. Leave to cool for about an hour in the fridge and then divide the mixture into balls. Work them gently with lightly greased hands to give them a rounded shape. Your vegan mozzarella is ready!

Vegan mozzarella is used exactly like the classic cow's milk mozzarella. You can put it on pizza, or even inside toast and you can also prepare something very similar to a mozzarella in a carriage. Vegan mozzarella is also great au naturel. Try it in a salad or use it as sandwich filling with tomatoes or grilled vegetables. You can also make small mozzarellas and serve them as finger food.
