As they say at Monteverde Restaurant & Pastificio in Chicago “flour is power.” There, Chef Sarah Grueneberg and her team roll dough by hand on an elevated platform for all to see.
For those unable to swing by, this Sunday, Chef Sarah Grueneberg will show how to make ravioli from scratch. The hour-long class will be virtual and co-hosted with Virtual Dining Chicago, an online platform for virtual culinary experiences.
The James Beard “Best Chef” and “Top Chef” finalist honed her pastai skills at Spiaggia, a Michelin-starred modern Italian restaurant on the Magnificent Mile, before opening her own place, Monteverde Restaurant & Pastificio in the West Loop.
Chef Grueneberg became a balsamic vinegar aficionado after meeting expert producer Andrea Bezzecchi. But for this class, the flavor will come from cheese. Chef Grueneberg chose a recipe of ricotta and parmesan.
