List of Ingredients
- 21 OZ. of zucchini
- 9 OZ. of green beans
- 5 OZ. of shelled fava beans
- 1/2 CUP of coconut, desiccated and shredded
- 1/4 CUP of raisins
- 5 cilantro leaves, chopped
- 1 fresh chili pepper
- 1 lemon
- 1 TSP. of mild mustard
- 1 TSP. of curry powder
- extra-virgin olive oil
- salt
Method
Clean the zucchini, slice them lengthwise and cook them in a pan with a 1 Tbsp. oil for 1 minute.
Soak the raisins in warm water for 15-20 minutes. Drain and squeeze out excess water.
Juice the lemon and chop the chili pepper and mix with 1 tsp. curry, 1 tsp. mustard, and 3 Tbsp. olive oil for the dressing.
Trim the green beans and blanch them with the fava beans. To blanch the beans, bring salted water to a boil. Add the beans and let cook for 5 minutes. Remove with a slotted spoon and rinse with cold water. Peel the fava beans and chop the green beans into small pieces.
Mix the fava beans and green beans with the raisins, coconut and chopped cilantro. Toss with the dressing. Arrange the zucchini in dishes. Top with 2-3 Tbsp. fava beans and green beans, season with salt and serve with slices of toast if you like.
