- 1 LB. of freshly shelled peas
- 3 of slices of guanciale (or bacon)
- 1 of onion
- Fresh oregano
- Extra-virgin olive oil
- Salt

To make traditional Italian piselli con guanciale (or bacon), start by chopping the bacon. Slice the onion and brown it in a little oil with a pinch of salt in a medium-sized pan until soft.

Make sure that the onion does not take on color. Then add the bacon and a piece of freshly chopped red chili pepper if desired. Brown it for 1-2 minutes. Add the peas and cook for 3-5 minutes. Serve hot with fresh oregano.
