Radicchio and Legumes with Honey Emulsion

Soak the fagioli dell'occhio beans for 12 hours, then boil them in water and bay leaves for about 1 hour; salt them moderately only once cooked, then drain them. Cut the radicchio into strips, divide the cauliflower into small florets and slice them. Mix the beans, chickpeas and vegetables and prepare the sauce. Combine 2 tablespoons of honey and the juice of half an orange in a bowl. Bring it to a warm water bain-marie and stir until the honey becomes runny; at this point add 3-4 tablespoons of oil and a pinch of salt, emulsify and dress the salad.
