- 2 of peaches
- 9 OZ. of cottage cheese
- 7 OZ. of wax beans
- 5 OZ. of mixed salad
- 4 of baby zucchini
- 3/4 OZ. of basil leaves
- 3/4 OZ. of mint leaves
- 18 of blackberries
- Apple cider vinegar
- Extra-virgin olive oil
- Salt
Method

To make peach salad with blackberries and cottage cheese, first boil three inches of water in a cast-iron pan. Clean the wax beans, removing the hard ends, and cut in half. Boil them for 3 minutes. Slice the zucchini.

Add the zucchini, basil, mint, 16 of the blackberries and the diced cottage cheese to a large bowl. Drain the wax beans and cool them quickly under cold water.

Add them to the bowl with the other ingredients. Divide the peaches in half, remove the pit and cut them into thin slices. Add the peach slices to the salad. Mash 2 blackberries in a small bowl and mix with 2 tablespoons apple cider vinegar, 2 tablespoons olive oil and a pinch of salt. Use this vinaigrette to dress the salad.
