List of Ingredients
- 10 OZ. of Arborio rice
- 1/3 LB. of sausage
- 1 can borlotti beans
- 3 OZ. of onion
- Olive oil
- Butter
- Dry white wine
- 1 bouillon cube
- Saffron
Method

Prepare about 1 quart of broth using the bouillon cube.

Chop the onion and brown it in a saucepan with a pat of butter and 2 tablespoons of olive oil.

Chop the sausage and add it in. Brown the rice in this base. Add a splash of wine and let it evaporate.

Gradually ladle in the hot broth, adding more as needed. Drain and rinse the beans. Add them to the risotto once it is almost done, along with the saffron, and stir.

Top with a generous pat of butter and serve.
