- 8 OZ. of readymade pizza base
- 6 OZ. of Greek yogurt
- 3 OZ. of shaved Grana Padano
- 2 OZ. of mushrooms
- 1 summer truffle
- Baby spinach
- Mixed sprouts (we used beet and leek)
- Parsley
- Extravirgin olive oil
- Salt
- Pepper
Method
To make pizza with mushrooms and Grana Padano, first combine the Greek yogurt in a bowl with a pinch of salt and a generous grind of pepper. Remove the ends of the mushroom stalks, then carefully wipe clean with a damp cloth to remove any dirt. Wash and dry the baby spinach and the sprouts.
Using a spatula, spread the yogurt over the pizza base, leaving the edges clear. Cover with the mushrooms, thinly sliced at the last moment to prevent them from turning brown.
Next place even layers of shaved Grana Padano, spinach, sprouts (we chose beet and leek sprouts), and the parsley. Garnish with paper-thin shavings of summer truffle, then drizzle with oil and serve.
