List of Ingredients
- 1 1/2 LB. of readymade dough
- 1 1/2 C. of fresh tomatoes
- 3/4 LB. of Crescenza cheese
- Chopped fresh herbs (thyme, basil, parsley, oregano)
- Extravirgin olive oil
- Salt
- Black peppercorns
Method

Punch down the dough and briefly knead it on your work surface, then roll it out to about 1/5 inch thick. Oil a shallow, wide pan 12 inches across and place the dough in it.

Top with the washed and sliced tomatoes, the cubed Crescenza and plenty of minced herbs.

Sprinkle with salt and add a grind of pepper and a drizzle of oil Bake in a very hot oven for a few minutes, watching carefully, then serve.
