- 4 CUPS of all-purpose flour
- 1 2/3 CUPS of tomato sauce
- 2/3 LB. of mozzarella
- 2 1/2 TBSP. of dried starter yeast
- 1/2 TSP. of sugar
- black olives
- ’Nduja (spicy Calabrian pork spread)
- 1 of fresh red chili pepper
- dried chili pepper flakes
- basil
- extra-virgin olive oil
Method
Mix the flour with 1 1/4 cups water, the yeast and sugar. Then add 3 tsp. salt and 1/2 tsp. dried chili flakes. Shape the dough into a ball, place it in a bowl, cover with plastic wrap, and let rise for 2 hours.
Preheat the oven to 450°F.
Oil a baking sheet and roll out the dough on it. Let it rise for another 20 minutes, covered with a dishcloth.
Cut the mozzarella into 1" cubes. Season the tomato sauce with a drizzle of olive oil, a handful of sliced basil leaves, a few slices of fresh chili pepper, a little salt, and a pinch of dried chili pepper to taste.
Spread the tomato sauce over the dough and bake for 15 minutes. Remove the pizza from the oven. Top with mozzarella and 3 Tbsp. black olives, then broil for 5 minutes. Remove from the oven. Complete with basil leaves and a few tsp. of ’nduja. Serve immediately.
