- 12 OZ. of shell pasta or short pasta
- 12 OZ. of cherry tomatoes
- 9 OZ. of stracciatella cheese
- 7 OZ. of agretti (salsola soda)
- basil leaves, chopped
- extra-virgin olive oil
- salt
- pepper

Preheat the oven to 390°F.

Clean the agretti and blanch in boiling salted water for a few seconds; drain and cook the pasta in the same water until al dente.

Place the whole cherry tomatoes on a baking tray lined with parchment paper and season with oil and salt. Bake at 390°F for 7-8 minutes, then peel.

Brown the tomatoes with the agretti in a pan with oil, salt and pepper for 1 minute. Drain the al dente pasta and sauté it for 1 minute in the pan with the tomatoes and agretti, along with 1 Tbsp. stracciatella and a handful of basil leaves. Transfer the pasta to plates. Finish with the remaining stracciatella and serve.
