- 11 OZ. of fusilli pasta
- 1 CUP of fresh ricotta
- 4 of oil-packed anchovy fillets, chopped
- garlic
- fresh red chili pepper
- oregano
- extra-virgin olive oil
- salt
- pepper
Method

Cook fusilli in a large pot of salted boiling water until al dente.

Mix ricotta with 3 Tbsp. olive oil and season with salt and pepper.

Sauté 2 unpeeled, slightly crushed garlic cloves in 3 Tbsp. olive oil for 1 minute. Slice 1 red chili pepper in half and add it to the pan along with chopped anchovies, and a pinch of oregano. After 2-3 minutes, add 1 Tbsp. water, then turn off the heat. Let cool and remove garlic and chili pepper.

Strain the fusilli. Pour flavored oil over the pasta and top with cold ricotta. Serve immediately.
