- 14 OZ. of medium fregola pasta
- 11 OZ. of grape tomatoes
- 7 OZ. of green beans
- 4 OZ. of marinated anchovy fillets
- chili pepper flakes
- fresh mint leaves
- salt
- white wine vinegar
- extra-virgin olive oil
Method

Cook fregola in salted boiling water for 15 minutes; remove when just al dente, and spread on a tray to cool.

Clean and cut green beans in half. Cook in boiling salted water for 4-6 minutes. Drain.

Slice the tomatoes. Chop 1/2 the marinated anchovies.

Transfer fregola to a bowl and season with a little chili pepper, 4 Tbsp. oil, 2 Tbsp. vinegar, and 5-6 shredded mint leaves. Complete with green beans, tomatoes, and marinated anchovies, (whole and chopped). Serve.
