- 2 2/3 LB. of veal shoulder
- 1 LB. of black grapes
- Whole grain mustard
- Dry white wine
- Capers, rinsed
- Extravirgin olive oil
- Salt
- Pepper

Place the veal shoulder in a baking dish, rub with plenty of salt and pepper, season with a generous spoonful of whole grain mustard, spread all over the surface of the veal, and 2-3 tablespoons of oil.

Bake at 350 °F for 1 hour, then remove the baking dish from the oven, turn the meat, add the grapes and a generous tablespoon of chopped capers, and douse with 1 cup of white wine; cook for another 5-6 minutes, then cover with aluminum foil and bake for another 45 minutes.

Remove from the oven and allow to cool. Serve the roast sliced with the rich sauce in a bowl on the side.
