- 12 slices pork loin (1 lb.)
- 4 OZ. of pancetta (slab bacon)
- 1/2 OZ. of thinly sliced pancetta or bacon
- sage
- unsalted butter
- salt
- pepper
Method

Cut pancetta (bacon slab) into 1/4" thick cubes.

On each pork loin slice, layer sliced pancetta and a sage leaf. Roll to close.

Prepare 4 skewers: Add 3 rolls per skewer, alternating with bacon cubes. Melt 1-2 Tbsp. butter in a pan until foamy. Add skewers and brown on all sides. Season with salt and pepper. Serve.
