- pork shoulder
- 8 of bread rolls
- 1/2 red cabbage
- Garlic
- Black pepper
- Spicy paprika
- Brown sugar
- Cumin seeds
- Tomato passata
- Red wine vinegar
- Extravirgin olive oil
- Coarse and fine salt
Method
Place a handful of coarsely crushed black peppercorns in a large bowl along with a tablespoon of paprika, brown sugar and coarse salt each, a teaspoon of chopped cumin seeds and a chopped clove of garlic.
Mix well, then place the pork shoulder in the bowl. Rub it with the spice mix, then place it on a baking tray lined with parchment paper and bake at 300°F for 5 hours and 20 minutes. Remove from the oven and let cool. Slice the cabbage very thinly and dress it with oil, vinegar, salt and pepper.
Shred the pork shoulder. Mix the cooking sauce with a little bit of tomato passata. Open the rolls in half, fill them with the cabbage, shredded meat and sauce.
