- 4 STEAKS of fresh tuna
- 1 OZ. of oilpacked Taggiasca olives, pitted
- 4 SLICES of prosciutto crudo (or cured ham)
- 2 WHOLE of lemons
- Capers, rinsed
- Extravirgin olive oil
- Salt

Peel the lemons and remove any pith (save any juice that comes out). Chop the lemon wedges, but not too finely.

Chop the olives and a tablespoon of capers, then mix them with the chopped lemon. Cook the prosciutto slices in a hot non-stick pan for less than 1 minute per side so they become crispy. Then cut them into thin strips.

Lightly grease the tuna steaks with oil, season them with salt, and sear them in a dry hot pan for 1-2 minutes per side. Serve the steaks with the olive mixture and strips of prosciutto. Garnish to taste with shaved lemon peel and parsley.
