- 2 LB. of pumpkin
- 4 OZ. of grated Grana Padano (or Parmigiano) cheese
- 2 of crumbled amaretti cookies
- Quince mustard
- Balsamic vinegar
- Butter
- Salt
Method
Cut the pumpkin in half, remove the rind and the seeds, then slice it and blanch it in boiling salted water for 4-5 minutes.
Drain and let cool.
Line a baking tray with lightly buttered parchment paper.
Form 4 mini cakes (you can use a metal ring): place a few slices of pumpkin side by side creating a curved shape and cover with a little bit of Grana Padano cheese, butter shavings, drops of balsamic vinegar and a teaspoon of mustard.
Continue in the same way making three layers for each cake.
Finish with butter shavings, a teaspoon of mustard, a large spoonful of Grana Padano, a pinch of salt, and finally the crumbled amaretti cookies.
Bake in fan mode at 390°F for 10 minutes, then remove from the oven and serve with sage leaves to taste.
