- 4 PCS. of very fresh eggs
- 2 C. of champignon mushrooms
- 2 hours OZ. of mesclun greens
- 1/2 C. of shaved Grana Padano cheese
- Lemon
- Extravirgin olive oil
- Salt
- Pepper
Method

Fill a large pot with water and acidulate it with a splash of vinegar. Bring it to a low boil and slip the shelled eggs into it. Cook them for 3 minutes. Dress the mesclun greens with 4 tablespoons of oil, the juice of 1/2 lemon, salt and pepper, the shaved cheese and the champignons, sliced very thin. As soon as the eggs are ready, serve them on the mesclun.
