- 4 of mackerel fillets
- 1/4 C. of sunflower seed oil
- 3 1/2 TBSP. of milk
- 1/4 C. of macadamia nuts
- 4 of baby zucchini
- 4 of strawberries
- Fresh marjoram
- Extravirgin olive oil
- Salt
Method
Use an immersion mixer to blend the milk with the macadamia nuts and a few marjoram leaves. Then slowly pour in the sunflower seed oil, continuing to blend until you obtain a mayonnaise. Clean the zucchini and halve them lengthwise.
Use a vegetable peeler or a very sharp knife to slice them into very thin ribbons. Slice the strawberries. Make sure that the mackerel fillets don’t have any bones, then grease them on both sides with extra-virgin olive oil. Bring about an inch of water to boil in a pot with a steamer basket (the water must remain below the basket).
Once it comes to a boil, place the fish in the basket, cover with the lid and cook for 2-3 minutes. Serve the fish with the zucchini and strawberries, seasoned with a drizzle of oil and a pinch of salt and finish with the mayonnaise, some marjoram leaves to taste and a few chopped macadamia nuts.
