List of Ingredients
- 1 LB. of clean perch fillets
- 1 LB. of boiled potatoes
- flour
- butter
- sage
- white wine
- salt
- pepper
Method

Lightly flour the fish fillets and brown them in plenty of foamy butter with sage leaves, a few at a time, for 3-4 minutes each. Then add a splash of white wine and let evaporate.

Add salt and pepper to taste. Serve with mashed potatoes and season with the fish sauce.
