Baked Mackerel Breaded with Orange, Pine Nuts and Grissini

For the mackerel and breading:

To make baked mackerel breaded with grissini, pine nuts and orange, first roughly chop the grissini with the pine nuts and mix them with the grated peel of 1 orange. De-bone the mackerel fillets, sprinkle them with extra-virgin olive oil and cover them with breading. Place the fillets on a baking sheet lined with baking parchment, season them with a drizzle of extra-virgin olive oil and bake at 425°F for 6-7 minutes.

For the mayonnaise:

Peel the ginger, grate it and squeeze the pulp to extract the juice. Blend the egg, add the juice of 1/2 lemon, a pinch of salt and then pour in the seed oil and continue blending until you reach the right consistency for a mayonnaise. At the end, add the ginger juice, adjusting the salt if necessary. Serve the mackerel fillets seasoned with a drizzle of oil and salt. Complete with the mayonnaise and some blackberries and lemon balm leaves if desired.
