- 2 of cleaned bream, scales removed
- 7 OZ. of cardoncelli (or portobello) mushrooms
- 7 OZ. of champignon mushrooms, sliced
- Thyme
- Chervil
- Dry white wine
- Salt
- Extravirgin olive oil
Method
Clean all the mushrooms, cutting off the bases and cleaning the rest of them with damp paper towels. Cut them in quarters lengthwise. Put the pieces in a bowl and toss them with a drizzle of oil, thyme leaves and a pinch of salt. Massage the bream with oil and put a sprig of thyme and a pinch of salt inside them.
Set the fish on a baking sheet with the mushrooms and bake everything at 350°F for about 20-25 minutes, basting everything with a little white wine after about 10 minutes. Remove the pan from the oven and put the fish and mushrooms on a serving platter, topping them with the cooking liquid. Garnish with the chervil.
