List of Ingredients
- 2/3 LB. of white chocolate
- 2/3 C. of cream
- 1 C. of Italian 00 flour
- 2.5 OZ. of candied lemon and orange peels
- 1/3 C. of brown sugar
- 1/2 C. of rye flour
- 1/4 C. of granulated sugar
- 1/2 C. of almond flour
- 1/3 C. of shelled and unblanched almonds, ground
- 1 1/2 TBSP. of Acacia honey
- 2 of eggs
- Baking powder
- Ground spices (cinnamon, nutmeg, ginger, anise)
- Salt
Method

Beat the eggs together with a pinch of salt, the honey, the brown sugar, and the granulated sugar until they are light and fluffy. Incorporate the almond flour, the ground almonds, and the finely chopped lemon and orange peels. Then add in the 00 flour, rye flour, 1/2 teaspoon of baking powder, a teaspoon of cinnamon, and a pinch of the nutmeg, ginger, and anise.|Combine the mixture thoroughly and let it rest in a cool place for about 3-4 hours. Place the mixture in a pastry bag and pipe out 20 small discs onto 2 baking trays lined with parchment paper. Bake at 320°F for 12 minutes.
