- 1 CUP of mascarpone
- 1 CUP of all purpose flour
- 5 TBSP. of unsalted butter
- 2 TBSP. of cane sugar
- 1 of egg yolk
- 1 of pear
- 1 TSP. of Acacia honey
- ground cinnamon

Preheat the oven to 350°F.

In a food processor, blend the butter, egg yolk, a pinch of cinnamon, and the sugar; then add the flour and blend again.

Roll out the dough between two sheets of parchment paper to 1/8" thickness. Remove the top sheet of parchment paper and cut out the cookies. Perforate the surface with a fork, and bake on a sheet lined with parchment paper for 15-16 minutes.

In the meantime, combine the mascarpone with 1 tsp. honey and a pinch of cinnamon. Dice the pear into 1/2" cubes. Serve the cookies with the mascarpone, the cubed pear, and cinnamon.
