List of Ingredients
- 1/3 CUP of all-purpose flour
- 2 TBSP. of unsalted butter
- 3 apples
- 1 large egg
- sugar
- baking soda
- ground cinnamon
- white wine
- apricot gelatin
Method
Preheat the oven to 340°F.
Peel 2 or 3 apples and chop them into small cubes. Put them in a pan with a splash of white wine and cook for a few minutes until softened. If you use softer fruits like peaches or plums or ripe pears, you can skip this step.
Melt the butter and mix it with the flour with 1 tsp. sugar, the egg, a pinch of baking soda and a pinch of cinnamon. Pour the batter into an 8" cake pan lined with parchment paper. Arrange the fruit on top and bake at 340°F for around 40 minutes. Remove from the oven and, while still hot, brush with a little apricot gelatin, which will melt on the surface to form a glaze.
