- 14 OZ. of Reinette apples
- milk
- stale bread
- sugar
- 3 TBSP. of almond flour
- 2 TBSP. of Slivered almonds
- cornmeal
- 2 TBSP. of Italian 00 flour
- Egg
- Lemon
- Butter for the pan
Method
Cut the bread into cubes, transfer to a bowl and cover with milk. Peel and core the apples, then cut into pieces, but not too small.
When the bread has absorbed all the milk, combine it with the apples, the Italian 00 flour and cornmeal, the grated lemon zest, the sugar and the egg.
Line a 7-inch square pan with parchment paper, butter it and dust with almond flour, then pour in the bread mixture, leveling it out well, and bake at 350°F for 50-60 minutes; halfway through the cooking time, sprinkle with half the slivered almonds. Remove the cake from the oven, let it cool and unmold it; serve with the remaining slivered almonds.
