List of Ingredients
- 11 OZ. of oranges
- 7 OZ. of stale whole grain bread
- soy milk
- 1 C. of almonds, blanched
- 2 OZ. of carrot, peeled
- 1 TSP. of peanut butter
- Sugar
- Extravirgin olive oil
- Salt
Method

Slice the carrot into thin strips, then put them in ice water for 30 minutes so that they become crunchy and slightly curly. Then toss them with oil, salt and sugar. Blend the soy milk with the almonds, peanut butter and 1/4 cup water.

If you want a milkshake with a very smooth texture, you can pass it through a sieve. Peel the oranges and separate the segments. Keep the juice that falls while you're doing this.

Slice the bread, toast the slices in a nonstick pan without any added fat and cut them into cubes. Spread 2 tablespoons of the almond milkshake on plates, followed by a few drops of orange juice, the orange slices, seasoned carrots, diced bread and a drizzle of oil.
