- 1 of cantaloupe (2 lbs.)
- 6 OZ. of mixed salad greens
- 1 lime
- Fresh chili pepper
- Extravirgin olive oil
- Salt
Method
Slice the chili pepper in half, remove the seeds and membranes, then soak it in water for about 30 minutes to let it purge.
When it is time to serve, remove the seeds and skin from the cantaloupe and cut it into chunks. Place them in a large bowl together with the mixed greens, washed and drained.
Chop the chili pepper, then blend it with 1/4 cup of olive oil, a pinch of salt, and the juice of 1 lime. Pour the dressing on the prepared salad and garnish with some lime zest.
Bring to the table, stir in the presence of your guests, and serve immediately.
If you want the dressing even spicier, chop the chili pepper without soaking it in water. You can also use an organic lemon instead of the lime.
