- 9 OZ. of snow peas
- 9 OZ. of buffalo mozzarella
- 3 OZ. of spring onion
- 3/4 OZ. of white vinegar
- 1/4 OZ. of anchovy fillets in oil
- dry white wine
- extra-virgin olive oil
- salt
- pepper
Method

Trim the snow peas and cook in boiling water for 3-4 minutes from when the water returns to a boil.

Slice the spring onion into thin rounds and brown in 1 Tbsp. hot oil with a pinch of salt for 1 minute, then deglaze with 1 Tbsp. wine, lower the heat and cook for another 3-4 minutes.

Purée the anchovy fillets, vinegar and 1/4 cup oil with an immersion blender adding salt to taste, to make a savory dressing.

Slice the mozzarella and serve with the snow peas and spring onion. Top with anchovy dressing and freshly ground pepper.
