List of Ingredients
- 1 QT. of milk
- 11 OZ. of baccalà (salt cod, soaked and desalted)
- 9 OZ. of extra-virgin olive oil
- 7 OZ. of seed oil
- 1 of sliced onion
- 1 of garlic clove
- bread
Method

Place the cod in a large pot and add the milk, onion and garlic. Bring to a gentle simmer for 12 minutes or until tender.

Drain the fish and break into pieces. Eliminate any bones. Begin 'whipping' the fish with an hand held electric mixer with whisk attachment or in the planetary mixer while adding the oil in a thin, slow drizzle: alternate the seed oil and the olive oil. Whisk until you have a creamy mayonnaise-like consistency. Serve on crostini di pane, bruschetta or toasted bread. Top with fresh herbs to taste.
