- 4 OZ. of bunch arugula
- waterpacked mackerel, drained
- extravirgin olive oil
- 3 TBSP. of vinegar
- 2 of anchovy fillets in oil
- 1 of cucumber
- 1 of red bell pepper
- Fresh garlic
- Salt
- Pepper
Method

To make mackerel, bell pepper and arugula salad, first peel the cucumber and slice lengthwise, then place in cold water to purge. Wash and quarter the bell peppers, remove the inner membranes and seeds, and cut into triangles. Wash and trim the arugula, removing the hard part of the stems.

In an immersion blender, combine the oil, vinegar, anchovies, a small clove of fresh garlic, a pinch of salt and a grind of pepper. Blend until emulsified.

Combine the bell pepper with the arugula and the drained and squeezed dry cucumbers, then add the flaked mackerel fillets and dress with the emulsion.
