- 1 LB. of baccalà (salt cod), desalted
- 3 OZ. of radicchio
- 1 of tangerine
- 1 of pomegranate
- Minced shallot
- Parsley, chopped
- Extravirgin olive oil
- Salt
- Pepper

Clean the cod, removing the skin; dry it on paper towels and finely chop it into a tartare. Season with 1 teaspoon of chopped parsley, 1 teaspoon of chopped shallot, 1/4 cup of olive oil, and salt. Wash and chop the radicchio.

Grate the peel of the tangerine, then peel it, separate out the segments, and discard the skin. Slice the apple. Remove the seeds from the pomegranate. Arrange the radicchio on plates, top with the baccalà tartare, and garnish with the apple, tangerine, and pomegranate. Sprinkle with tangerine zest, a pinch of salt and pepper, and serve.
