Ingredients
1 ½ cups 00 flour, 1 cup potato starch, 1 cup icing sugar, 5 firm egg yolks, 1 cup butter, Lemon zest
Method
Place the sifted flours on a pastry board, add the sugar and form a hollow in the middle. Place the butter at room temperature in small pieces, and start kneading only with the tip of your fingers. Add the boiled egg yolks that you have passed through a sieve and flavored with the grated lemon peel. Make the dough, cover it with plastic wrap and let it cool in the refrigerator for at least half an hour. Remove the dough, roll it out with a rolling pin on a floured surface and cut the biscuits with molds. Place each cookie on a baking sheet covered with baking parchment and bake at 375° for 15 minutes, or until they become golden-brown.
