For Christmas Eve, we’re bringing a dessert that’s made to be celebrated. The typical yule log cake is something everyone appreciates, because it’s beautiful to look at and delicious to eat. The best part? Decorating it! Surround it with some mistletoe and holly, as if it really came straight from the woods, and make it even more indulgent with red berries and chocolate shavings.
The Yule Log is very simple to make, but careful attention must be paid to the sponge cake base. With its super soft consistency, it needs to be rolled up carefully, otherwise it will break. In any case, if that were to happen, the damage is easy to repair with the frosting later on.

The yule log recipe
With a stand mixer or an electric hand mixer, beat together 3 eggs with 2/3 cup of sugar for 10 minutes, then add in 1 tablespoon of honey and beat for a few more minutes. Add 2/3 cup of sifted flour and slowly mix from the bottom upwards. If you want to make a chocolate sponge cake, at this point add in a heaping tablespoon of sifted unsweetened cocoa powder. Spread the batter out in a rectangular baking pan (9” x 13”) lined with parchment paper. Bake at 350°F for about 15 minutes. Turn the cake over onto a moistened sheet of parchment paper and remove the other sheet of parchment paper from the top of the cake. Sprinkle with granulated sugar and cover with plastic wrap.
Roll up the cake carefully and let it rest for 10-15 minutes. Unroll the cake and spread the hazelnut cream on top, then roll it back up. Frost it with a chocolate ganache made by melting together 1/2 pound of dark chocolate with 1 cup of cream and 2 tablespoons of butter. Let it cool. Wrap the Yule Log in plastic wrap and let it chill in the refrigerator for 1-2 hours.
