Tomatoes, olives and Barilla Spaghetti N.5 are revisited in a brand new sound. “We wanted to tell a story through sound, so we tried to take out the essence of the small moves that create a simple yet powerful recipe like the Puttanesca,” says the Italian chef Davide Oldani, the Michelin-starred master who has coined a style of cooking defined as “cucina pop” based on perfectly balanced contrasts. With Barilla and the music band Food Ensemble, chef Oldani just launched an immersive soundscape scoring the careful details of Spaghetti alla Puttanesca’s recipe preparation. But the synergy between Barilla, Davide Oldani and Food Ensemble is not new. During the World Pasta Day in 2018, the chef and the ‘food musicians’ trio met to transform Oldani’s recipe Spaghetti al cartoccio cacio e pepe into a musical composition. A year later, this collaboration becomes a true musical collection, The Spaghetti Symphony record. Four award-winning pasta recipes have been transformed into four music tracks, the perfect soundscapes for cooking and exploring simple yet delicious Italian recipes.
In the album The Sound of Pasta, the worlds of music and Barilla pasta come together beautifully as a celebration of all five senses, where pasta is shape, color, aroma, taste and also sound, and where simple elements are combined to obtain a different experience each time. “They have so much in common, but they are unique in their own way. Music is an art made of sounds that you can reproduce and listen to whenever you want. Sampling a dish is always a new experience, even if you have already had it before: it depends on your current feelings, on the feelings of the people at the table, even on the chef’s feeling,” recalls chef Oldani during the recording of the Spaghetti Symphony record. An album to listen to and experience where Barilla Spaghetti N.5 pasta is an art that takes different forms and involves all the senses, including hearing. The recipes conceive sounds while dancing with the ingredients, the flavors blend with notes to create delicious symphonies, all in an immersive sensory journey.

4 servings: 1 box of Barilla Spaghetti n°5, salt, 1 can of diced tomatoes, 1 Tbsp extra virgin olive oil, 1 tsp chili flakes, 1 Tsp fried capers, 1 Tbsp chopped Taggiasca olives, fresh horseradish (about 1.5 tsp, grated)
Directions: Boil the spaghetti in plenty of salted water, drain when al dente. In a pan, heat the oil and add chili flakes, then add the tomatoes, reduce the heat and simmer. Adjust salt. Drain the pasta and add the tomato sauce and olives. Divide the pasta in the dishes, add olives, capers and grated horseradish. Serve immediately.
