Rice Soup Recipe

You’ll add 1 ½ cups rice, an onion, a celery stalk, a carrot, a clove of garlic, extra virgin olive oil, grated Parmigiano Reggiano, salt and parsley to 6 cups of meat broth.
First, chop the vegetables and fry them in a saucepan with a little oil. Once golden brown, add the broth and once it reaches boiling point, add the rice. Let cook for about fifteen minutes and then turn off the heat. Add salt and finish with a generous sprinkling of Parmigiano Reggiano and chopped parsley. Serve steaming hot.
